I know that on the races where you get one of four cars for winning, you can keep going back and get a different car each time. On races where you get one specific car, you get the car the first time and never again.
So, that means there are some cars you can never get back if you sell them. For example, look at the Vanquish. It's not buyable. You get it from the Pro British GT (single prize car) and from the IA License Gold. So, say you thought the Vanquish was a lead brick that you weren't going to drive and you sold both of them to unclutter your garage, you can never get another one without starting a new game or trading another person.
I looked up all the race prizes, and from what I can tell, every one of these cars is gone forever if you sell it:
Mazda 787B (Pro Like the Wind, 75% Complete)
Sprinter Trueno GT-Apex Sigeno (Amateur FR Challenge)
Vanquish V12 (Pro British GT Car Cup / IA License Gold)
Spoon Civic Type R (Pro FF Challenge)
CLK Touring Car (Amateur Silver Arrow)
Nismo 400R (Amateur Race of Red Emblem)
Nismo Skyline GT-R S-Tune (Amateur 80's Cup)
Lancer Evolution VII Rally Car Prototype (Pro 4WD Challenge / Rally of Alps II)
Mine's Lancer Evolution VI (Amateur Race of NA Sports)
Lancer Evolution VI Rally Car (Amateur Evolution Meeting / Smokey Mountain II Rally)
Impreza Rally Car Prototype (SS Rt 5 Wet II Rally / Rally License Gold)
Escort Rally Car (Tahiti Maze Rally)
Celica Rally Car (Rally Challenge)

For PAL players, the Viper Team ORECA should be on the list because it can't be bought, although it doesn't really matter, because PAL players can't sell it, either (thanks Famine).
Can anybody confirm if these are the only 14 cars you have to worry about keeping?
