It really can come down to what line-up you choose as to how easy a race can be.
Check out some of the posts in
this search to help with some more info.
One way you can make it more interesting is if you are getting a bit too far infront during the race, pull off to the side of the road and enjoy some scenery for a while, then start concentrating again.

P.S. When actually racing the event, take regular breaks. It can help with your concentration.
All you have to do is pause during the race, get up walk around / toilet break / even sleep
