Depends on the game, I believe HalfLife and other 3dShooters you have to animate them, but others (like Ultima9, and other higher end 3d games) use their own fluid movement modules. In other words, add the bones, then the program manipulates them.
As for links, you need it specific for the game you want to learn to model for. Most companies hire their own modelers instead of contracting out however. But lots has happened.
Check out the 3D Maxed Out site I put above. Nothing really is on the site, but check out the message boards. Thats where I learned 3D Studio Max.
