The only colors you can collect are the ones with the names next too them
The colors with -- next too them you can't

You also can't collect McLaren paint colours either. It was the same in GT5.

The only two cars I can remember with Pink are the Lexus LFA and the '01 Honda Fit (Jazz). The Honda Insight (new one) has a bright Metallic Blue. Not sure exactly the colours you are looking for. I couldn't seem to find a Pink Kart. Which one was it?

hi,,the colors i refered are the really baby blue ,,is the racing kart jr. the blue after the really bright green,,,,and the pink is in the formula gran turismo,,,,check them out ,,,i just love racing with those colors and people will notice you better in the races,,,,

There seems to be a lack of Pink cars. Looks like it is that light Metallic on the Fit and the very bright one on the Lexus.

I quite like that Insight Metallic. Another option could be the '78 Firebird or the TVR Tamora. Not quite the same, but may suffice.

There is a really light blue with the LFA and with the Jaguar XFR-S. Like sky blue. Pink is with the LFA as well, and I remember the 86 concept had it. If anything the 15AE gives you a plethora of chips.

I won a paint in a race, so I suppose the chromes and other special paints will pop up as seasonal prizes etc

^This. And also the Colours that came with the AE Edition include the GT Chrome Colours Silver and Gold + some others, Matt, Pearleffect, Colourchanging etc...
Everything else needs to be won in Seasonal Events or comes with cars you buy/win. Once you have the chip, you can buy it in the tuning shop and apply it to your car, as often as you like (but costs you couple of thousand bucks everytime you paint your car)

French Blue from the Lotus Europa is a bright light blue.

Passionate Pink (LFA) and Moulin Rouge ('70 Challenger) are pinks.
