I just thought I would post this for any one struggling with turning circles being too wide in some cars (not all) or struggling with the rally races on the controller. After trying out many settings I found I had this option set as 'strong' and turned it down then off completely. I then easily got the golds I was pulling my hair out for. I could turn nearly full lock so much sharper and accelerate quicker. This also helped me with rally races and I am much faster feeling less restrictive pulling across and out of the corners. I would say it is worth a try if you haven't done so already and see if it makes a difference. I haven't played the wheel yet this is just for the controller and the back ends still stay quite stable with it off.

You find it in the assist settings if you pause the game while on track. Has anyone else turned it off and found it so much better now?

I found I was consistently faster in the tests with the ASM off too!
Thank you @Biffco me too, now I can't remember if I had this on/off in GT Sport but it definitely helps on the sharp turns here so I thought I would see what everyone else here was doing as a few gold licence was nearly impossible with it on.

Same to me in license test on suzuka hairpin with nsx... No way to make it cornering, not even similar to demo video, then I found this setting... Put off, gold at first try

It's quite logical that if you have a car that is extremely unstable by nature, but still controllable, then the countersteering assistant slows you down a lot.
Or you drive races where this instability is necessary, e.g. driving a rally.

When drifting, I noticed that it helps me not to exaggerate the drift angles or to catch too high a drift angle or turning in too quickly.
