Im currently using:

Downforce: 20
Trans: Top speed @ 273
LSD: 6/28/5
Suspension:
Ride height: -20/-15
Spring rate: 15.9/8.2
Extension: 9/3
Compression: 8/5
Stabilizers: 2/5
Camber: 2.6/3.6
Toe: 0.11/-0.07
Brakes: 6/8

But even on an oval circuit the suspension looks a little bouncy to me, any help?

I know that setup. :D

It was actually designed for an '02 GTS... As for it "looking bouncy"... Does it actually upset the car, or is it just appearing to bounce around a bit?

Im not sure if its actually affecting the car but it visually bounces around loads.

I changed to this setup:
Aero: 20
Transmission: 249
LSD: 40/30/30
Suspension:
Height: -20/-20
Springs: 9.5/9.5
Dampers (Ext): 7/7
Dampers (Com): 5/5
Anti-Roll: 7/7
Camber: 3.0/3.0
Toe: 0.00/0.00
Brakes: 8/7

It was made for a Viper ACR 10' but its improved my lap times by 1 second a lap. But this isn't made for this car can anybody design a setup for the SRT10 coupe?

Neither of the setups actually are so yeah...

The ACRs are likely closer to right for the SRT10 Coupe than my GTS setup you were previously using. Also of note is that the power delivery is wildly different between the GTS and '03+ models, so the ridiculously long gearing of the setup you were previously using was largely ineffective (in the GTS, it's very near redline at 240mph, not so much in the later cars).
