First of all: You have to select manual gear change. (Obviously)
Then: Some cars admit clutch and H-Gear change. Others not(Like in real life). But The only thing you have to do is press triangle button just after the race has load and you are a few seconds away for taking the control of the car. It is the only way I know to activate clutch pedal shifting. Otherwise(if you do not press triangle before starting) you would be able to change with the H-Shifter without pressing the clutch. Once you have clutch pedal activated you would not be able to change a gear with the h-Shifter and the gear selected would be always N (Neutral) if you don't press the clutch.
Note: In GT5 Prologue, Clutch pedal is an ON/OFF button, it hasn't got analog feeeling.
