Here are my settings that makes the cars feel stable, no lag and fun to drive.
I use analog stick for throttle and analog stick for steering.

Force feedback 100%
Stearing deadlock 2%
Stearingsensitivity 8%
Throttle deadlock 5%
Throttle sensitivity 1%
Brake deadlock 5%
Brake sensitivity 1%
Cluthdeadlock 0% (dont affect i guess)
Clutch sensitivity 50%
Speedsensitivity 5%

Theese settings work great on out of the box cars in careermode...the ones you can tune you can get even better feeling. There is no inputlag on theese settings and the response is quick and no countersteer problems. Throttle and brakes are great and the rest is up to you. If you like GT5 feel then this is it!
Edit....
alter the steeringsens up to 11 if you want but never below 8 or you get lag and countersteer lag.

I tried them and no offense, cars felt really bad. Everything was very twitchy and i kept spinning out even before approaching a turn.

then its not the controllersettings.

I tried setting steering sensetivity to 10 and then 8 when I first got the game and, while it did make the ratio feel a bit closer to that of GT5, the lag was definitely still there. Also, while 8-10 did suit my driving style better that the default setting, I found that a setting of 50 seemed more appropriate for the way the game 'wants' to be played.

Lol, are you trying to say I'm a bad driver? Because honestly, even the default setting was more drivable. The cars just felt very twitchy in your settings.

Same here, with these settings it's incredibly twitchy and on some cars the FFB rumbles 100% of the time.

I cant say for that, lower ffb, but i have no twitchy cars out of the box. If you do a little tuning you can get them even better.
But hey, if you need to set sens up the do it. But after 15 i find it to sensitive to play. And you have to play analog.

I put steering assist and use bumper cam, never touched any of the sensitivity settings.
