Obviously the LM versions are for Le Mans but what other tracks are they suited for?
And they are lower downforce versions for high speed tracks right? But in all realism the higher downforce package would be easier to drive yea?
The high Downforce models are usually easier to drive around bendy tracks, the low downforce models are more accelerative and faster. Thats the whole difference. Once we have the Old Le Mans circuit, you´ll see why the cars had the LM outfit.

I know there won't be the bends in the long straight, but will it be 70's era or older?
Sms will need to please a variety of customers with this so i bet it will be a layout from the late 70s early 80s because its a compromuse between all of the past layouts. Thats just my guess though.
I'm hoping there will be 2 versions: (1) 60's "classic" and (2) mid - late 80's for the max speed with group C before the Mulsanne chicanes were added. Given the unique and lengthy history of Le Mans, I don't think it would be unreasonable, and it would still count as one track, just with 2 variants.
