The car has more power and weighs more then any other, I raced it on the Nordschleife and it actually flew in the air at the first high speed turn. Anyone have any ideas?

you did not ask a question so idk how to answer. If your asking about how to stop flying over the bumps hit the brake just quick right before the bump and it will cause the front to go down and not fly threw the air. I have to do this with a few of my cars, especially the veyron.

add some downforce and hit the brakes before that jump

Down force will not do anything if that's all you do- it will cause the front to raise more when on a crescent turn.
What you want to do is add down force, but then on ballast put 3-10kg and then position the weight in the front of the car.. probably -25 through -39 (set to your liking perfect center of the front wheels, after some testing see where it stands)
Problem solved.

**Also what you want to do is set your suspension a bit lower and softer (not much, LITTLE), then also you want to put some more tension on your anti-roll bars. Keep the body level and suspension in a nice low-hug compression so you have more contact on the track surface.

for the price of overall performance loss...

Hardly any performance loss, 3-5kg is nothing you'd ever notice to a significance. Maybe drop a point of PP but nothing to worry about at all.

I'd like to hear the physics on how down force will not push the front end down, subsequently keeping it from leaving the ground.
That should be good.

And I'd never recommend adding ballast to any car unless you have to to meet spec, or it's beneficial in PP terms. Otherwise it's foolish.

IDK if you can add front down force to the GTR, if you can, do so, if not, slowing down or really softening the suspension are the only possibilities that won't slow you down the rest of the lap. Of course I hate soft suspensions so I'd just deal with it by braking as mentioned above by shmoGT.
