When I first got GT5 I was very excited, but slightly disappointed because it wasn't as fun as I thought it would be, but it was more realistic than any other racing game I've played before. The most realistic part of GT5 wasn't the actual driving or physics, but it was the career mode. The career mode was too realistic as it involved tedious tasks such as earning licences.
As a player of both games who plays with all the assists off, except TCS, and ABS, and plays with a pad...
When I got Forza Motorsport 4, I realized the physics, and car handling was actually more realistic.
In Forza 4, I was able to "feel" the weight of the car, and I noticed several differences in the driving mechanics. I wasn''t able to chuck the car in the corner as fast as I could in GT5, I also had to use smarter throttle control to reduce spinning and torque steer so I can get a quicker launch. I then noticed that the high quality sound effects and the better controller vibration helped me know when the car is sliding better. Another thing that made it more realistic but a slightly less fun was that in Forza, I would messed up bad if I bump into a wall or another vehicle. I'm not talking about car damage, but the way a crash throws you off balance.
In GT5, If I bumped into a wall or another car, it would just lightly respell me without making me go off course, spin out, or get stuck. I did notice the grass in GT5 is more realistic. In Forza 4, your car will get stuck at a slow speed if you try to cheat and cut corners. One weird thing about GT5's physics is that if hit the e-brakes, and slide the car side ways, the car will automatically pull itself back to a straight line. (Unfortunately my car didn't do that in real life when I slid on black ice before.) In Forza 4 the car will not do that. Lastly I noticed that in GT5, I can still turn even when the wheels are locked.
So I conclude that the driving physics are better in Forzamotorsport 4, but the over-all career mode is more realistic in GT5.
