I have found proof.

i my self once thought they were to dark, but they are actually pretty damn accurate see here.

The darkness in that video is just due to the camera. The brightness outside makes the camera over compensate and make the interior look too dark. I'm not a camera person so I dont know how to correctly describe the effect, but I'm pretty sure that's the camera making it look that dark and not the fact it is actually that dark ;)
 
Although The camera in the video does make it look even darker still, the OP is right, try sitting in your car on a bright summers day (like the weather in GT5p) and you will find that the shadows are indeed very dark and defined.

If the interior view try to reproduce what we can see during TV retransmission then I think it's accurate. Due to the way the lens treats informations like lights and contrasts, it produces darker shadows (back-light effect ?).

But what real eyes can witness is (way) clearer and more detailed. Shades we see are lighter and don't hide elements with a black mask.

If I remember well, Toshio Suzuki pointed out that detail when he saw the difference between his real lap on the nurb and what he saw on GT5P @ 1080p. It was on THE GT-R Legend ANOTHER STORY.
