Will all the Premium cars in GT6 will have every gauge working inside the cockpit?

This sounds like the most likely case. I doubt most cars will have other gauges working, but some do such as the GT-R which has functional readings on the infotainment display.

Many of them have other working gauges and displays, like the oil pressure on the Ferrari F40 and Miata Racing Car, working watches (when dealing with time progression locations like the 'Ring or LeMans) as the one on the classic Camaro or the Nissan 370Z... it's a question of time and possibility.

As well, some cars have working fuel gauges in cars such as, the Nissan 370Z, the Madza RX-7 (Touring Car DLC, unsure if roadcar has the same thing). There will probably be more cars with working fuel gauges in GT6 though, and a small possibility that other gauges will work. Most likely, only a few cars will have all gauges working.

Don't forget the speedos. Some cars have them working on the dash for your mileage

I think the Fisker Karma have working battery and fuel gauge, possibly odometer like the Audi Quattro S1 Rally car, Ferrari Dino, BMW 507 and some more cars might have them are that's what I saw many youtube videos.

Edit: tree'd from oink83 for odometer, but only I guess Fisker Karma possible have it.
