How could we find that a car is "rolling"?

Are you referring to the cars ability to 'roll through' the center of a corner
Or the cars tendency to 'roll over' on the opposite tire of the corner?

Rolling through is the cars characteristics as you coast through the apex of a turn.
Rolling over, is when happens when the car is leaning too far in the opposite direction of the turn, leading the tire to 'roll over' meaning it's putting the majority of it's weight on the outer edge of the tire, and in extreme situations part of the side wall.
 
Pitch is tilting forward and back, rolling would be tilting side to side. If the springs are too loose the car will roll more, that's why you can stiffen the anti-roll bars. Drive in third person and see how the chassis moves during turns.

I could very likely be completely wrong, but this is my impression.
 
I find that bumper car is really good for sensing body motion. It's the only cam I use, largely for this reason.
