Very nice race cockpit you've built! It's apparent you're very talented in both your design and craftsmanship!
Here's something to consider for those true 'race fanatics'...who like to take their sim racing to the next level, who might be interested in purchasing your product:
(1) Allow for the addition of a 'butt-kicker' to be added both under the seat and up near the wheel mount base.

(2) Include, as an 'up-sale' of course, speaker stands, which installed, would allow for rear speakers to be mounted behind the seat, as well on the sides of the front section..and if possible, a mount for a center speaker so the use of a 5.1+ surround sound system can be utilized...such as seen in the image below:
(3) A 2nd "optional" stand, albeit not as high, for the use of a handbrake, on either side of your race cockpit....as seen in the image below:
As someone who has a 3rd party racing cockpit, seen below:
It wasn't really built for any 3rd party shifters, nor a hand-brake and I had to do a little 'customization', which considering how much I paid for it back in 03', was somewhat of a disappointment...Thus, if someone like me were to come along as a potential client, I would expect that even though not part of the main package, the merchant/seller (You) would have a few 'additional accessories' available that would allow me to expand on the base setup.
Also, I would hope to expect that your race cockpit would offer a wide range of movement for all aspects, such as pedal base mount, wheel stand mount and seat, such as in the picture below:
Speaking of 'accessories' and 'up-sells', I would consider a TV mount, strong enough of supporting a HDTV up to AT LEAST 36" (inches), to further the immersion factor.
As it stands now, your price point puts you in a very competitive market, with the likes of:

So, you'll need to ensure that your cockpit, should you truly elect to take this to mass production, provides similar functionality, but also the same type of 'accessories', as well as allowing for some minor customization on the end-users part, as it's pretty evident that at a price of $700, you're probably going to get more sales from the PC raceing community, then you would from the 'gaming' community.
