Is it possible digital version of all GT disc version

I would love to file them all on my PS3 hard drive and play them back at my own convenience.

Digital versions of older games, you mean? No it's unlikely they'll ever be on the store for licensing reasons. Everything in the older games, the cars, tracks, music etc was licensed for sale as is back at the original release date. If they wanted to sell them on the store they would need to re-license everything and it's unlikely they ever will.

I've seen plenty in PSN store with digital version of other very old games but don't know why not for GT. Well if because of the licensing issues then only small hope on my part.

Yes. If it's a game with 100% original content created by the developer you simply need permission from them to put the game out digitally and of course they'll get a slice of the money.

However when it's a game with licensed content you need permission from the license holder again because when PD originally acquired them it would have been either on a yearly deal (Eg you can include X car in your games for the next 4 years) or on a per game basis (Eg you can include X car in your Y game released on whatever date but that's all, we don't give you permission to use it again). Those licenses are therefore likely to now be expired for a lot of the content.

Licensing is tricky business and unfortunately it works against the consumer for the most part.
