You know, I'm a sucker for V-10 powered hornets.

Years of production: 1999;
Engine: 2998 cc water-cooled V10 Mugen MF-301HD engine (producing circa 800 hp);
Transmission: Jordan 6-speed semiautomatic;
Curb weight: 600 kg (driver included);
Lenght: -- mm;
Width: -- mm.

Here's Damon Hill demonstrating why you want this in your game. The echo only makes it more epic.

1999 was a good year for Jordan: the Gascoyne-designed, Mugen-powered 199 was driven by Damon Hill and Heinz-Harald Frentzen in what would remain the best season in the short history of the Irish team: Frentzen finished on the podium a total of six times and collected two victories and was, for a while, a likely competitor for the World Championship; and Jordan would conclude 3rd in the Team standings.

As a fan of yellow cars, high-revving Mugen engines and Jordan (and its successor team, Force India) I argue that if we can get one and only one V10 F1 car in Gran Turismo, it should be this. As an added bonus, we'd get the Buzzing Hornet livery (which is cooler than the original Benson & Hedges).
