Regardless of what you use to drive in GT7, making sure that the controller is getting a full sweep of the controls is vital.
I know these from Radio Controlled models as (Endpoints and Deadbands)

Minimum Input (Deadband) is the amount of pedal/trigger used before a input begins to be made by the game. Most of the time you will want these at zero and there will be some dead spot regardless from the physical controller. If you are the type that has a unconscious thing for leaving your foot on the pedals, adjusting this up a bit may help you and your car find a happier place.

Maximum Input. (Endpoint or "Throttle/Brake curve") Fairly simple, this is where the game thinks full Input is. Now, if this is set lower than the actual throw of mechanical components of the controller the car will feel twitchy as the input ramps up very quickly. This is where you will have to read about Linear curves.

Now that you have your inputs set you can find your FFB and assist settings*.

*Not all cars are the same. A race car has less steering wheel input than a street car will. Same with better brakes. Adjusting for both maybe necessary. And, maxing out the FFB settings seems to just confuse the game's outputs to the controller. Please read the online manual if you have not.
**If you're real life daily has a giant dead spot when you hit the throttle or grabs the brakes at the very sight of the pedal it may help to set your game inputs to match your daily drivers. 😉
