I dont know about you but I love the way on a lot of you have to manually launch from the start line. Usually, you change from N to first gear. You wouldnt do that in real life though would you.
I dont like the fact that the clutch is automatic on GT at the start line. It means you get a perfectly timed launch every time.
I think having to time your starts adds another bit of excitement to the start of a race, having the ability to have a bad start or even accidentaly get a head start.
If the races on GT are 2-5 laps most of the time then it would be hard to implement a penalty system for head starts like a drive through penalty or whatever. It does make the starts more realistic though in my view.
