Starting in wrong gear

When using a manual tranny with paddles (Fanatec Eliite)I am in neutral at the starting line, then the race starts and it throws the car into 3rd gear off the line, and I have to downshift to first. It did it with the GT2 also. What am I doing wrong? Thanks
