The opening seems familiarF1 2010-2016

Has anyone else noticed that the opening for the game is comprised of various digitized parts of the races up until the Canadian Gran Prix, or am I just really slow?

I noticed that too, when I first saw it I was thinking "hang on, they're recreating the races". Although there are a few inaccuracies (e.g. Maldonado in Australia is shown to crash at the exit of Turn 10 when in the race he actually crashed in Turn 6-7).

I think it kinda also highlights the 7 winners in first 7 races thing.

Yeh i noticed it long time ago, they tried to made the scenes by the highlights clips by FOM

It isn't inaccurate at Melbourne. Watch it again, same spot the car hits the wall and smashes the wheels off. 2011 had the same thing, the intro was moments from earlier that season
