This doesn't answer your question directly, but as a rule of thumb, you very rarely have to turn the wheel more than 90 degrees left or right. So unless you are in a hairpin where you might go to 120 degrees or so, you know you are turning too much if you are over 90 degrees.Guys, how does the game let you understand if you are overusing the steer, meaning rotating the steering wheel more than needed?
I guess that the steering wheel gets lighter, but G29 is light on its own, so I'm not sensible enought to estract info there.
If tire screeching sound another hint?
Is there any other techique I should inspect?

Tyre screeching just shows you are losing grip. That could be because of braking in a straight line too much (front or rear tyres, or both, sliding), or turning while either braking more than you should, or having too high speed. Both tend to lead to understeering - where you turn less than you intend to and the front yres drag across the track rather than going around the corner. Turning the wheel more then just makes it worse; the answer is to go slower around that corner. You'd also probably hear (rear) tyres moaning on oversteer, but that is a more obvious thing to spot.
