What racecar should I aim for if I manage to save up?

Maybe various budgets say 4/7/12 million

Bugatti Veyron vgt is the best car I got currently but feels like its fuel economy make it struggle. Is this common for all vgts you are better if with say lemans prototypes?

Only have the f1 car otherwise at above 800pp but I dont like that one as I only get to race other f1:s

787B has an exceptional fuel economy. It's cheap, as well
 
Best all around IMO is the F-1500T/A. It won't win every race for you but it'll get you in the running to win some main and post game content.
UNLESS you have the 25th Anniversary Edition. In that case you already have a great car in the Living Legend. Use it wherever you can.
Really it depends on what you're wanting to spend and if you can muster it up on command. If you're looking at, say, half a million, you could tune a road car.
At some point you'll need a good mid engine road car, that's the Citroen and invites for it show up fairly regularly. You'll also want a Porsche and a Ferrari of some type for specific events, the Living Legend and the F-XX-K will decimate the competition and pick up where the Citroen road car leaves off.
Late game, the Red Bull Standard and Red Bull Comp are very potent. I also like the Porsche 919, but like the F-XX-K, its KERS is limited (this limits the 919's four wheel drive too).
Unlike real life, you can't go wrong with anything Ford (IRL that only applies to their trucks). The Raptor is probably the least suited Ford for GT7 but it can still hold its own. Any GT40 variant will work well.
Some other good choices were listed above. The Sauber Mercedes is always a fast opponent and the 787B is a fine car by any standards.
My choice cars through the years have been as follows:
GT1: 1995 Impreza WRX, Dodge Concept Car.
GT2: Ford GT40, Vector M12 (detuned in some cases).
GT3: F 090/S, F 686/M, Eunos Roadster.
GT4: 787B Road Car (all black).
SCUD Race: 1995 McLaren F1.
1998 Sega Rally: the Stratos, what else??

Gr.4: Alfa Romeo 155 DTM

800 PP races such as Sardegna: CLK-LM or Suzuki Escudo with a 800PP tune as that's currently the fastest car for grinding atm. Also agree on the 787B but the Jaguar XJR9 is a very good car too for grinding aswell.

Gr.3 BOP races: If you have the 25th edition then use the Gr.3 Mazda Vision GT for these, I haven't driven the regular one but I imagine the performance may be the same.

Gr.1 races: McLaren MP/4 '88

I have the Anniversary Edition with the Mazda you mentioned, yet none of the Mazda VGT's in Brand Central show that I have acquired them.
I did try the Maggiore race with the one I have... 2:05+ lap times. ☹️

I am not sure if i''ve done that race with it yet but that car was the only way I was able to pass the Daytona BOP race but that was when the game first came out so maybe physics changes could change how the car drives, I do remember it being incredibly hard regardless even though I play on easy but Chilli races tend to be pretty difficult.
 
Really like those answers. Been thinking about those just because I like those cars :)
Only problem is, you can't buy them thanks to the wonderful rotating dealership. Neither of those will be available again until around the first week of 2023.

For Gr1 I personally love the Peugeot 908 HDI, with a Turbo the damn thing has amounts of torque and if you short shift it's great on fuel saving, it understeers quite badly on stock suspension so you will need to fine tune it.

For Gr2 it doesn't matter, the devs forgot about this car class anyway.

For Gr.3 I personally love the Mazda RX VGT, incredible chassis and power curve is predictable.

For Gr.4 I like any 4wd car like Nissan GTR because I can power out of corners without worrying about oversteering, but the car is quite boring to drive.
