When to use stick shift or flappy paddles?

I've just got my first wheel (G27) today, and couldn't be happier with it :D

I want to be doing things fairly realistically and so would only allow myself to use flappy paddles when they are actually in the real life version of the car. Problem is i don't know that much about cars to know when i can and can't use them.

Is there a general rule? or maybe a database for this sort of thing?

Usually only high end supercar has the paddles, Nissan GTR, Ferrari, Audi R8 ...I have a fanatec wheel, if the car doesnt have the H shifter, the game usually doesnt let me use it, that's the general rule i guess lol
 
The clutxh will not engae on cars that have smg gear boxes. For example the EVO X...you cant use the h-gate but it wont penalize you for not pushing in the clutch. Thats how you know.
 
or if the car has cockpit view, you can clearly tell there are paddles and not a floor shifter.

LOL. God I wish I had remembered that fact. I spent all night on Tuesday trying to re-do my Firmware on my Turbo S wheel (as I had got out GT5P to get some practice in before I picked GT5 the following morning) because I was sure it had decided to not work on the one l day I had looked forward to the most since getting the wheel a year ago when there was nothing wrong with it!!!!!
