All of mine are PS1/PS2/PS3 iterations (a lot of the early games in particular were quite different on PC):
1. NFS III Hot Pursuit (PS1) - Awesome fun, great tracks, loved 2 player and the cops were a nice addition in 1 player
2. NFS IV Road Challenge (PS1) - Not quite as good as the above but cool tracks and the damage element was a little more advanced
3. NFS Shift 2 - Unleashed (PS3) - Many flaws but enjoying this having recently got it
4. NFS Hot Pursuit 2 (PS2) - Actually got this years ago but didn't play it through, need to pick it up again. Captured some of the thrills of its PS1 forebear but not sure I liked the way you could freeze time and zoom the camera up the road ahead to check for cops
5. The Need For Speed (PS1) - Old now but loved the way this game flowed, felt a little less frantic with swooping hills and a lot of flat out racing.
Special mention for NFS II on the PS1 also, lots of cars and some awesome unlockable novelty tracks but ultimately a little messy. Also liked NFS Porsche 2000, great variety of cars though it lacked a little in pace, and the strange layout of some of the town tracks and Police speed traps grated a little.
Of all of the other games I think i've played demos at least of all of them, but I really really wasn't crazy about them. I think I like my arcade racers generally simple and straight up, I don't need spinning rims, neons, cinematic special effects, gaudy customizations and such (plus the physics often felt really odd to me), but different strokes for different folks
