Got a fair few to share with y'all, if you don't mind...
To start: for years, I was a huge NASCAR nut. And of course, nearly everyone I knew either didn't know about it or thought it was tedious. So much like this thread, I would use just 2 specific races to convince them of it's merits. These two are below: the '03 Dodge Dealers 400 and the '07 Daytona 500. The latter I watched live, one of the first I ever watched live start to finish (being in the UK I didn't get the chance most of the time) and it still sends shivers up my spine.
Since then I've added another to that list: this was an EPIC race, despite being the longest on the calendar it was a monster from start to finish.
As for other sports...if anyone needs a second excuse to get into sportscar/GT racing, here's 2 for you: 2007 12hrs of Sebring, and the 1969 Le Mans 24 Hours. The 1st I watched live on Motors TV till very late, the 2nd...well, I wish I was there. The closest (non-staged) finish in Le Mans history, with one of the greatest sports cars ever winning when it had no right to still be competitive.
Looks like everyone has already baggsied my choices for V8 supercars, some superb ones...although no-one so far has mentioned this...2010 Gold Coast 600. Overseas superstar guest drivers, but in the end it came down to two home-grown heroes. Awesome.
Mind you, last year's one was a treat too...if we ignore the chicane fiasco from race 2. Race 1 had a mega drive from young James Moffatt
And for my beloved BTCC...the 00s may have had some odd good moments, but the glory years of the 90s are where it's at. I remember watching this first one at my nan's house with the Brands Hatch circuit just half a mile away, and hearing the cars themselves echoing over the treetops. Still spine-chilling.
And this one needs no explanation. Possibly the greatest touring car race ever.
Not so much my two cents as my ten-dollar bill, haha!
