Can you adjust caster IRL?

OK, in karting, one of the first changes I'll make at the track is caster.
In case you don't know what caster is, it's the angle of the king pin when looking straight at it from the side.
More caster will give you more grip throughout the turn in both the front and the rear, but will make the kart much more "twitchy."

I haven't done any work with cars, as I'm only fourteen, but is it possible to change caster on cars in real life?

And if so, would this be a tuning option you'd like to see in the GT series?

Yes it is.

Depends on the car. Quite a lot of '03-8 Mazda6s pull slightly (or more than slightly) to the right due to incorrect caster angles... Due to the suspension design it's not adjustable.

And yes it should be in here. Drifting would be so much easier.

It should, particularly given the full race suspension is costly enough to have every measure of adjustment known to man.

After I swapped my power rack for a manual rack, I had to get re-aligned and had the caster set down to 3.5 for lighter steering effort.
