Resurrecting an old thread here.
From my searching there seems to be similar reports of GT6 crashing problem on other various forums and the common theme that I can see is Fat backwards compatible PS3's as well as the first non backwards compatible 40GB model.
So CECHA, CECHB, CECHC, CECHE, CECHG and CECHH models.
Later fats(CECHJ +) don't get mentioned as much. Slims hardly get mentioned at all, mostly for faulty lasers.
I honestly believe that the earlier consoles just don't have the thermal capacity within the CPU/GPU to play this game. These earlier fat consoles had 90nm chips for both CPU and GPU which use a lot more power. Later Fats started going 65nm and slims ended up at 45/40nm. So the hardware is not equal is what I am getting at.

I also have GT6 crash regularily on my original CECH-C (Australian (EU) backwards compatible release model 60GB PS3).
It was crashing from day 1 that GT6 came out.
Same crash as described beforehand, black screen and console has 3 beeps and flashing red light.
As updates for the game were released the crashing first got better, as I gather they were fixing bugs at first but then the crashing steadily got worse as later updates came along. I gather the extra features tax the system even more in later versions.
I mean it crashes every time you play it with the final updates
If I had not finished the game before these updates were released I physically would not have been able to finish the game.

The console does not crash in any other game.
I can leave it to play GT5 in a 24 Hour endurance in B-Spec without a problem for example.
This console was repaired for YLOD in the past. 3 times because the first 2 they did not actually replace the solder, they just reflowed it!!! 3rd time they did it properly and it never misses a beat except in GT6.

GT6 can crash in a menu, during a race, during a load screen or during a replay.
The most common crash place for me is during a race. No pun intended.
The next most common is after wining a seasonal event when it presents the prize car it crashes whilst it is saving, resulting in a corrupted game save.
Good thing the backup save is always there.

I have already tried with no luck:
* Blowing all dust out of the PS3. Was not much in it.
* Reducing game res to 720P.
* Clearing cache in the game and the console itself.

I have not tried:
* Reformat the whole PS3. My USB seems to only operate at 1.1 speed, ie no USB 2. That will take forever to backup and load all the data back. I did not notice this until I upgraded the hard drive well outside the warranty period!!!
* Starting a new game with no save. I doubt this would make any difference anyway.
* Start new game on a new account on the same PS3. Same as above, can try it but don't see how it will help.
* Deleting all the data and re-installing the game. Sound like a pain from what I am reading but I am willing to try this one.
I have seen a process of doing 3 updates, cancelling the rest, launching the game and repeat. Is that really necessary?
It is suggested that the update process corrupts if you try doing it all in one go. Is this still the case?
