I use a PS3 custom firmware that has the XMB screen capture function available for every game, there's also video capture plugin but its usage is poor with Gran Turismo.

Even with the flaws, Polyphony Digital people are incredible.

Indeed, especially when you consider Gran Turismo 6 has the downfall of having to run on hardware released in 2006.
