I'm really jazzed about this thread. I can't believe that it was started just after GT7 release & that I never saw it.
I already am collecting images 📸

My guess at the current image is some Tokyo Expressway layout.

That is correct! Guessing the exact layout would be tough, especially because I don't remember which one it is, so it's your turn

I currently don't have access to my PS.

I have some images from GTS on my PC; I'll submit one of a track still present in GT7.
Next time, I'll be better prepared.

I am in Race Photo mode it appears a little blurred. Help on how to export would be appreciated too.

Press Square to focus on the track and then it'll blur the car instead of the landscape, or park it up and you don't have to worry about either.

For exporting it, just share it and head over to the GT website - you can go to your gallery from there. This link is to mine but you should be able to navigate to yours once you've signed in.

To address generally the potential process of viewing replays & making photos if you are unfamiliar, I would suggest this link:GT7 Manual - Race Photos

About the blur issue, @Nebuc72 suggests a good tip of using the Focus adjust function. Default focus is on the actively viewed car from replay mode. Not only can you place the focus on any non-car point you choose, you also can move the focus to another car. This technique is helpful when selecting a faster Shutter Speed with cars having divergent vectors.

Then in the Camera Screen, you can use the Aperture (F-stop) control to set your depth of field. Note that the range of this works dependently with the Zoom level. Here is an image with the focus on the drone & with the depth of field narrowed to blur the car:

Speaking of Zoom, I also prefer to select carefully my camera position in the Camera Selection screen, often opting for walk mode. Here is a photo at St. Croix for which I moved the camera far up hill then zoomed back to get this view:
