If the car you own is the gifted 25th Anniversary Edition, it mightn't count towards the book (I can't remember if it does or not though).

Additionally the car may be marked as collected (the blue book icon) but if you have sold it you also won't qualify; the car needs to be currently owned.

Showing your garage would answer which of the two it is.

From my own frustrated experience, the X2019 Anniversary Edition doesn't count towards the menu book.
