Koenigsegg CCXR Trevita - I'd personally prefer the newer '10 Trevita since its supposedly their best production car sofar. I think someone needs to find a way to determine which one people actually like if they even know there's several newer models of this car.

Lamborghini Reventón '09 because I saw it on top gear and it looks awesome. Would be a great addition to GT family
Bugatti Veyron Super Sports '10 because if im not mistaken it's the current top speed car and it needs to be in the game
Ferrari FXX '05 this car is stylish and is quick. It's a car that needs to be in the game
Hennessey Venom GT '11 has all the style that makes people look at it. I mean some standard cars shouldn't have made it in the game. Don't we deserve a racing car game that has cars we want.
Porsche Cayman R '11 saw this car on here and love it buy any Porsche deserves to be in GT series

This thread feels a little idealistic but it's fun and dang hard to narrow down to five cars! Here are mine, dated from the 1950s onwards as I think otherwise I would just list a bunch of cars from 1880-1950, a huge period hardly covered in GT:
Porsche 959

BMW M1
Also a few Ferraris etc. but I figure at least we already have some of those! Noble M600 would be number 6.

Looking at the first post it beats the hell out of me why a BMW comes top (if it was the M1 I would understand), much as I like powerful saloons and exec cars, how they sometimes seem to ignite the imagination more than other classic cars or supercars is beyond me, still, different strokes for different folks!

I'll try and put up cars I think no-one else has done but deserve to be in there (although my first thought was an E30 Evo M3!)
First up I'll go the batmobile, a classic stalwart of the 70s touring car scene:
1973 BMW E9 3.0 CSL 'Batmobile'
Next, and I don't think anyone has posted this, but I'm amazed that they haven't, is the legendary 1973 Porsche Carrera 2.7 RS 911 - it is *the* definitive 911:
I personally would love to see the following:
The 1973 Lancia Fulvia Rallye 1.6 HF Variante 1016, just gorgeous IMO.
Would also love to see this (my Dad's first car, the jammy get!)
1962 MK1 Lotus Cortina.
Which brings us onto the final choice (5 is so not enough, I probably could have listed hundreds), while I'd love to see the MK1 Mini back, rarities such as Citroen SMs (with the Maserati engine), obviously the Pagoda Top Merc and so on . . . I think for its heritage and significance I'd like to see:
1961 Volvo Amazon Sport.
Keeping that down to 5 was really hard
