One has to ask why? It was complex, fragile, and hugely expensive. Granted, it was ahead of the bike technology at the time, but still..... why?
A "modern" bike with a V8 would still be complex, expensive, and probably heavier than it would need to be, and packaging is a monstrous issue.
I can think of two V8s in modern(ish) bikes. Allen Millyard's Kawasaki, built by grafting 2 four-cylinder blocks onto a common crankcase, and Morbidelli's 800cc V8. The Kwak was a custom builder's one-off, not intended to be an actual product, and the Morbidelli was, how you say, poorly received.
