I have a 40GB PS3 that I got as a replacement for my constantly-dying 60GB model. The only problem is that the fans kick into high speed after just a few minutes of playing GT5.

Should I go ahead and open it (still a virgin system) and put some clean paste on the CPU/GPU? I could send it in for servicing, but that would cost me around US$175 (roughly the price of a fair used system).

What should I do?

Things heat up quickly. When it does, the fan will kick in.

As long as your PS3's in an open and well ventilated area, you won't have to worry.

Take Dice's advice, but buy yourself a two year protection plan off PSN. This will cover your PS3 under warranty for an additional two years.

Additionally to what is mentioned you can invest in a couple cans of compressed air and once a week blow off all the dust around the openings. Once a month or so take the cover off and give it a good cleaning as well. This should be done with all your PC's and other electronic equipment.

I let mine run a lot even when I'm not on it so I just invested in a intercooller from Nyko that plugs into your power cables plug on the back of the system and then you plug your cable into the intercooler. Has 3 fans with a High/Low switch on the back. Does an excellent job removing excess heat. I was surpirsed how much it was drawing out. So far it seems there is less stress on the system as well. For $15 you cannot go wrong.

The 40GB is notorious for this, the fan appears to have only two settings: silent or hurricane. ;) I still have one here and it does that with any game. Besides being really annoying, it's not going to hurt.

I had this with my all of my now broken 40gb's. Some were louder than others but it was really annoying. If the paste was old or worn, you would have a YLoD.
