i saw the platinum version in hmv on the 30th december and i thought it was a bit early

KY says that all the cars are now finished and they working on the crowds and enviroments which must mean its close to being finished

I think you misunderstood. KY did definitely NOT say they are finished with "all the cars". What he said was basically that cars look like they want them to now, so they work on other aspects of the game. No word of how many or all cars being finished. Actually, you can expect them to add cars until the last minute to be as much up-to-date as possible.
