Servo motors are smoother than stepper motors. Watch this video where he compares the smoothness of this wheel with the SimuCube 2 Ultimate and Fanatec DD2:

I believe there is a reason some companies to choose stepper mottor, SimXperience is not noob company - on opposite...I believe some developments find stepper motors better, there is no other explanation...even stepper motor used is 30$ cheaper than the servo motor - I doubt that the company will decide to choose this saving over the better motor, when the price tag is big enough to handle it...
