Hi. I am a beginner. drive an automatic transmission. I want to switch to a manual transmission. How to switch gears on a gamepad is better by controlling the gyroscope? How do professionals do it? what buttons on the gamepad to set up for gear shifting?

You're using the gyro to steer? If so, my advice is: L2/R2 are your brake/gas using index fingers, L1/R1 are your shift down/up using thumbs. Hold the pad like you would a wheel.

I also assigned MFD controls to the left stick for convenience. I had to remove functions from the left d-pad button and the circle button because I kept pressing them on accident.

I think if a person is already used to using their index fingers for throttle/brake with the L2/R2 triggers it makes way more sense to use the buttons and thumb for gear changing. I use triangle and square because it feels a little more natural than X and square to me but either way, the thumb is just sitting there doing nothing and using it for gear changing rather than having to get used to holding the controller a different way so you can use index fingers for L1/R1 and middle fingers for L2/R2 seems like a more sensible way to go.

(I can't comment much specifically relating to motion control steering though. I never used that...thumbs for L1/R1 and then index fingers for L2/R2?? Hmmm...)

Personally, I perfer the right analog stick to shift. Probably a weird choice but it feels more natural to me. Flicking the stick feels kinda like actually pulling a lever on a sequential gear box in a video gamey type way.

I am a dinosaur
But since GT2 on PSOne and through my GT journey

Whenever I use the pad, I have always used X = gas (yeah I am old school when top trigger did not exist yet on NES era)
[ ] = brake

L1 = downshift
R1 = upshift

I never got used to using the L2 /R2 for brake and gas respectively. It feels awkward for me..

In the end it is up to you how you want to set up, a matter of personal preference.

L2/R2 for brake/throttle and square/X for down/upshift when I used a controller. My advice for learning it is to pick a car/track combo you know and just drive laps. You'll hate it at first because you brake and turn at the same point every lap but the actual speed you're going at varies massively from lap to lap, but you'll get used to it eventually.

I am no pro by any means but I do use gyro ( motion control) and shift with X and square. Here one TT lap example.

Triggers for brake and gas, left stick to steer, and X for up gear and square for down gear.

Works great. Just remember to be easy of the down shifts or the drive wheels will somewhat lock and you could lose control.
