In my opinion that's probably the most interesting question.
The UCD refreshes after one "day". Interestingly, it's possible to achieve a refresh, for instance, just by loading a licence thingy, without really driving it.
Therefore, if we can assume that "days" have to pass for the career bar to progress, the only conclusion has to be that just entering and exiting a race will do.
Conversely, since I don't believe that PD really wants us to get this throphy that easily, I suppose that the career depends on races and not days.
(Provided that there is a specified definition of "day" in the program code and not many different commands for every eventuality, such as "what shall the program do if you
load a race,
enter a race without completing,
completing a race,...")
