If it takes longer than an hour, then it's a weekend meal. Everything I do during the week takes less than that. Made the chilli on Sunday at the same time Mrs AT made our pork dinner, then just reheated it last night. Time management FTW! :D

Time management FTW! :D

Unfortunately, I don't have a 9-5 M-F job, so it can be quite difficult to find the time. Also, as I'm the only one who cooks (other half suffers from eating disorders), cooking two meals at once can prove testing. I suppose I've got to learn to use my days off more effectively.

Two PBSFP (Peanut Butter Sugar Free Preserves) sammies for brunch.

Dinner was a large salad with Fat Free Wish-Bone Italian Dressing.

Last night I made ricotta and parmesan fritters in a tomato and olive sauce with a grated courgette and chilli salad - all in under an hour. :sly:

Made this a few nights aga. Inspired by the Subway "Bravacado" sub, I decided to try my own. Turned out decent. But a bit more work than I anticipated. Queso blanco cheese, lettuce, avocado, spinach, sliced tomato, mayo, and turkey breast lunch meat.

In a bullet I blended leafy spinach with the Avacado along with some mayo. Didn't want to blend very well. I should have just mashed it together to save time.

Oh last night I tried a new bbq sauce that's actually better than Sweet Baby Rays. Its called Stubbs.

Here are some pics of my version of the Bravacado.

Been busy today so after sorting the kids with something to eat realised I'm starving.

Having some minestrone soup out of a can with some multi-grain bread.
True to canned food form it's crap.
My god it's bad.

This is my lunch today:

Salat, cucumber, tomatoes, pees, maize (corn), bacon and cocktail sausages.

Might not be the most healthiest...

Just had some prawn crackers.

Very nice. Cooked them from the little discs you get if you don't buy pre cooked.

I used to be a huge fan of Sweet Baby Rays BBQ sauce. Recently a friend said I should try "Stubbs" and wow it is the best BBQ I have ever had. So I have been trying this on different food most of this week. I have the original flavor.

Sweet Baby Rays is a good cheap sauce, I love their Honey Chipotle.

I haven't tried Stubbs yet, but may try it when I make ribs next week. I would also recommend Wee Willys if it's available in your area.

Of course none of those have anything on Da Ditka!!!

I have wanted to try it since we started carrying it at my store, however I don't want to pay $6 for a sauce with HFCS in it.

Slices of toasted sunflower seed bread with Manuka honey from New Zealand, peach jam, fig jam and dark chocolate spread. Not all at the same time on one slice of bread of course. :P

Dinner last night was homemade orange chicken and rice. Brunch just now was one of my mondo sandwiches: Ham, Chipotle Turkey Breast, Swiss Cheese, PLT, on Rye Bread with Mayo and Mustard! A handful of Cheez-It Big Crackers on the side for munching.

Sorry, no pics. The cable to connect the camera to the PC is busted. I'll post them when the new cable arrives.

Homemade spaghetti bolognese. So many versions of this classic, but I think I've found the easiest and tastiest yet! :D
