Scrambled eggs, crispy-baked shredded potatoes, red and green peppers...and brisket. Combined. With a little queso añejo, avocado and cilantro on top.

And carrot apple ginger juice with a splash of sparkling water.
 
I got my appetite back and made tomato cream soup. Had some cherries, ice cream, dates and maybe kefir.
 
Cheated a bit today and got a slice from the Portland party store. My wife's father used to own the joint. Their pizza was bomb back then. Award winning stuff in fact. The FIL sold it years ago and got screwed on the deal when the guy defaulted due to a bunch of shady choices that were made in his other business. We were going to buy the joint, get it back in the family, but the bids ended up a fair bit higher than we were comfortable taking on.
Probably wasn't for the worst. They had the money to really turn the place around and their pizza, while not winning any real prestige, is better than average. I just wish they used the crumbly Italian sausage instead of the balls.

I just finished my Kefir with Superfruits powder and coconut blossom sugar. Delicious.

Garlic-flavored bread made using a kitchen appliance whose primary function is mixing, kneading and baking bread. Some have settings for making other things, such as rice and even yogurt.

Giving up refined sugars has made it hard to find delicious desserts. I decided to try and make some "fudge" using coconut oil, dark chocolate powder, honey and a splash of vanilla and kosher salt.

They taste pretty good. When cold is a bit like eating a dove chocolate. At room temp its quite like pudding. I am having serious doubts however about eating this much coconut oil. I don't think it's so good for my gut, so I am going to continue looking into other options.

Made my better half's favorite: roast chicken stuffed with mushrooms, shallots and tarragon, with browned butter and sage brown and wild rice. Also got a couple of gorgeous "Hillbilly" heirloom tomatoes from a neighbor that I cut up (the tomatoes, not the neighbor) and dressed in a simple sherry-thyme vinaigrette.
 
Use that leftover Natural Light Strawberry Lemonade stuff for a chicken. Marinated a couple steaks in Andrias for about 4 and half hours too.

If, like me, you tend to make a lot of beer butt chicken, go buy a cheap stainless steel cocktail shaker to use instead of the beer cans which are lined with plastic that can start burning as the beer boils away.
That said, that all looks pretty good. Chicken skin looks about perfect crispy. The color the steak sauce turned the meat, I almost thought it was venison.

On a serious note. I don't do a whole lot of beer can chickens. But that's a very helpful tip. Thinking about doing more of them this summer as its really just so easy for a good meal.

The sauce comes from an old farmhouse style restaurant in the middle of nowhere. Family owned and ran for many many years. High class, very expensive... but they sell their sauce all throughout the greater metro area. I believe they sell it online now too. Just fantastic stuff. And if you sit at the bar when at the restaurant you can order the best damn plain hamburger you'll ever have in your life.

Now I want to go there. :drool:
 
I had blueberries, strawberries, bread with cheese/ butter and some vegetables Rucola, baby spinach etc.
 
I made something fun and simple.

French bread with an egg on top, placed in olive oil with red onion, dill, oregano, black pepper and salt to finish.

Really good texture. The bread soaked up the egg and got crisp on the bottom. Really smooth with a crunch.

Not bad.

Didn't have room in the belly to eat the chicken yesterday.

Had some today and it was great. Tender, juicy, and a damn good smokey flavor to it. Decided to ruin it with Hickory Brown Sugar flavored Sweet Baby Ray's BBQ sauce. Obviously by ruined I mean adding extra flavors that aren't needed. It still tasted great.
 
I made spaghetti sauce and it is delicious. Compared to two years ago when I had to throw my sauce in the garbage can because it was uneatable, this sauce is 100% improved.
 
Tullamore D.E.W., honey and lemon juice, shaken with ice, strained, and topped with ginger beer; soothes a sore throat and then helps you forget all about it.

I'm curious to what this forum could potentially have me eating.
Do you have a pressure cooker?

How about a cast iron pan (as one recipe I have is a Teflon killer...)
