Tonight for dinner, I had some French Fries, grilled chicken, some roasted turkey and spaghetti. My mom ate some green beans, white rice and grilled chicken also. We're going to bed now. We finished up 3 hours ago and cleaned up the kitchen.

Yesterday was burger night. Two smashed beef patties, American cheese, chopped onions, pickles and a mix of mayo and ketchup/mustard. Very nice and the bun held the moisture very well in exchange for a bit of chewiness.

I made my first ever pies...

Chicken and mushroom pies - one with shortcrust pastry on the top, the other with puff pastry.

They certainly looked the part, and I quite enjoyed them both - but for the sheer amount of work involved, I'd say they were mildly disappointing...

I added pancetta and porcini mushrooms for more flavour, but they weren't all that tasty. The filling was also not quite right - it was a bit drier than I wanted, though I reckon I should have served it with chicken gravy - will know for next time.

In all honesty, I think it would be far easier to just serve the chicken as a casserole and with a side of puff pastry - the idea of having a nicely intact pie on my plate quickly disintegrated (literally, and into a million pieces), but the shortcrust version (left) worked much better and was much easier to serve than the puff pastry one (right).

Dessert was Ben & Jerry's Mango Memories - it was delicious the last time I had it, but this time it was super disappointing.

For breakfast we ate some pancakes and bacon strips from Golden Corral, and 2 bowls of Tater Tots. We just drank plain water. It was a good meal to start the day off. For dinner, we had some white rice, 4 chicken tenders a piece, corn/black-eyed peas and some Seggiano fusilli pasta. We skipped lunch because we finished breakfast late about 12:02pm.
 
Found a jar of lingonberry that I bought at IKEA. It was gross with breakfast stuff and didn’t work for thanksgiving leftovers either. Only option I had was to make Swedish meatballs from scratch lol. Of course, it was a perfect match and was absolutely delicious. Now I only need to make 40 more pounds of meatballs to get through this whole jar of jam :lol:

I think I’ve told this story before. Too bad, you’re going to hear it again. Back in the ‘60s, my mom didn’t have time to make dinner on Christmas Eve because she was making Christmas dinner. So my dad stopped at Jack’s Tavern on his way home and picked up a couple of pizzas (and knowing my dad, probably a couple of beers while he was waiting.) It soon became a tradition in our family to have pizza on Christmas Eve, a tradition that’s been going on for 60 years now. Even when I was in the Air Force and stationed in England and Turkey, I kept it up. Jack’s Tavern stopped making their own pizzas, and switched to premade pizzas which just weren’t as good. They went out of business years ago, so we’ve been getting pizzas wherever we can find them. I had to resort to a dried out slice of pizza at the local 7-Eleven one year just to keep it up. This year, I ordered from Pizza Hut. Medium regular crust with crispy cupped pepperoni, carmelized onions, and roasted red peppers. For drinks, I got these Spylt caffeinated milk drinks. I can’t remember if I saw them here or on Bluesky, but I remember thinking I need to give them a try. I’ve only had the peanut butter and chocolate one so far. It’s like drinking a Reeses’s Peanut Butter Cup.

I had a simple Christmas dinner with lemon pepper salmon, a sweet glazed salmon and chicken thigh, creamed peas that had salmon scratchings incoperated, some eggplant parmesean, string beans, garlic knots and a some Welches sparkling cocktail.

It was a really quiet Christmas, no gifts, not the usual family around, but the meal together with family was nice.
