Maybe you are releasing the clutch too fast, maybe slow it down alittle (not too much where the engine is revving and your not moving much as the clutch slips) until you get used to it, its not a on/off pedal.
Start off by increasing the revs alittle (but not too much) and as you start to release the clutch, feed in throttle to give the engine the extra torque to take off smoothly.
but seriously just practice, trial and error, sooner or later you will get used to it all and can 'feel' how much throttle/revs and clutch is required and it will become second nature and you will become smooth.
