I collect a lot of old vinyl records and I'd say my favorite cover is probably St. Pepper's Lonely Hearts Club Band by The Beatles.
 
Heh, are we discussing cover art, or a second artist performing a work which had already been done by another artist?

In any case my favorite cover (in the OP's sense) would be Pearl Jam's cover of J. Frank Wilson & The Cavaliers' "Last Kiss" with an honorable mention going to Grand Funk's cover of Little Eva's "The Loco-Motion". Other good covers come to mind as I think on it, of course. Check out Joan Jett's album The Hit List which is all covers, some of which are truly excellent.
