Are you allowed to mix tyre compounds? For example can you put meds on the front and hards on the rear? or must it always be either med-med or hard-hard? I couldn't find any mention of it in the WGTC rules

I'm guessing you are asking for tyre wear reasons? If not I don't see why you would need to mix compounds. But yeah, I don't see why not. Its your event Brutaka, run it as you see fit my friend. All we provide is the racing regs and act as mediators in case of any disputes. 👍

Here is just a suggestion: Don't have a limit on a class and just do knock out qualifying the week before the race. For example, if there's 14 people wanting to race in GT3, hold a time trial session and the top 10 in the class is in and the reserves would line up in queue from the qualifying results.

I haven't tested yet, but, lets say I'm on a 4 stop strategy, may I pit 3 times in that first hour? Or must I only do two in the hour.

I think you can pit as much as you like, as long as the first two times are within the first hour.
