No. Just no. 60 or 30, because your display runs at 60hz. It will stutter otherwise (refresh rate is not synchronized with frames per second displayed). Even if you can't see it (brain not realizing) you will always feel it. You just need to see a perfect 60fps at 60hz and, to say 55fps at 60hz "head-to-head" one time and you will be able to notice it forever.
And no - V-Sync doesn't help. Take GT5 Prologue intro for a good example (watch it on original disc, not downloaded), especially when camera moves or pans at beginning. You will see, I swear
Perfect motion is only close term how to describe it.
Actually I think if PS3 were able to display at 50hz it will be perfect choice! GT5 rarely runs below 50fps but whole problem is due PS3 displays only at 60hz. 50fps on 60hz is not a best choice really...
