What technique do you guys use for the motorbikes? do you try to lean forward in the tuck position as much as possible? I find this is hard to do with the PS2 controller and still control the bike

The 'technique' that I probably use is just to watch GTA_Phreak's racing videos. I wish I had some technique that worked in all the races, but after having trouble in Dam Rider and Desert Tricks, the thing that works must simply be that I'm watching GTA_Phreak's videos.
On Backroad Wanderer, yeah, I try to lean forward as much as possible. There are a lot of straights on that race so that makes it easy. If you hit the first hill fast enough (ie. if there's no traffic in the way,) you can clear that first bump and land smoothly.
Then I always lean forward until the little bump before the turn that goes down and to the left. I'm horrible at turns and that's probably why I'm doing so bad at Dam Rider and Desert Tricks.
Then I always lean forward up and over that hill. (more than GTA_Phreak does in his video) Then I go to the left side of the road towards the bottom of the next hill so I can lean forward earlier. Then lean forward until the next turn to the left.
I think I always lean forward too during the next part. With that little s-curve you can either go to the left and cut to the right the way GTA_Phreak does, or try to go straight through (if you have good aim,) leaning forward. Or you can do a little ramp off the edge of the hill on the right and land past the part of the hill that sticks out on the left.
Then I lean forward and hopefully can stop before the next turn to the left (ie. while there's still ground under the bike.) Also, on the last turn before the marker, you can take that turn really sharp to the right and tilt the bike so it doesn't hit the hill and get airborne. That will help you to drive straight into the marker instead of getting airborne and going off to the side. That probably costs about a second. You can take that last turn REALLY sharply by tilting the bike.

I'm still pretty new to this. Hopefully I will be learning more and get better.
