Its not a "mistake", but i doubt it will change in the game.
The Audi R8 always has a certain temperature and (German) radio station in his cockpit.

I cant see a track map in Dave As pic.
Theres a white screen left from the speedometer with a black track map in the GT5 screenshot, i cant see that in the photo.

That red thing is not a track map, its something else (you can also see it in the GT5 pic behind the left hand of the driver).

There you can see the track map and yes this is Fuji too.

EDIT²: Okay, i made Dave As pic a bit brighter and now i can see it too.
Sorry but on my monitor i seriously couldnt see it.

Near the end of the video in the cockpit you can see in the middle of the dash the track has changed to tokyo R246, looks like track in cockpit will change then
