i'm not a GT pro but my 5cents since getting a wheel
Probably not a huge difference between them, advantage of joystick is that you can easily steer left or right max in an instant, with a wheel you have to rotate it completely against the force feedback.
Wheel on the other hand gives more precision, but I think PD did a very good job with the joystick on this front too. If you set the right joystick on a controller to Accel & Brake you can get precision there as well.
I tend to get better times on controller but use the wheel since it's fun, sometimes I can't be bothered with it though.
As for Leaderboards, people who are car\driving game enthusiasts will probably want the full experience the simulations can offer, so the popularity of Wheels on the Leaderboard might not reflect necessity but rather popularity.
That's from a noob perspective anyway, if you are stuck with a controller I don't see any reason why you can't enjoy GT5 though, Polyphony did a very good job with the DS3 controls and are one of the few console developers that let you re-map controls, also their use of the vibration for traction feedback is great.
