Everything that Smallhorses said, +1.
Also, to possibly shed further light on the "slow in, fast out" mantra, exit speed is key. Read it again: EXIT speed is key. If you go into the corner too fast, you are doomed to spend too much of the corner braking, sliding and losing speed. If you go into the corner more stable, controlled, and slightly slower, you'll be able to point your car exactly where you want it to go, get ankle deep in the throttle, and have more time WOT than your competition.
You should be able to go WOT at or just slightly after apex if your entry angles are all kosher. If your entry was too fast, you'll go sliding past apex and wind up having to spend more time on the brakes and steering to recover before you can get into the throttle. Remember, every time you hear a wheel screeching, it is losing traction. Since you cannot exceed the 100% traction threshold for your tires and your tires are suffering from lateral grip loss, then it only stands to reason that they are suffering from forward acceleration grip loss as well.
