When viewing a replay in the replay theatre, you can press L3 on the DS2 to fast forward the replay to go to the part you want to see. Handy for multi-lap races or the 'Ring.

But how do you skip the replay after the race?

Are you sure about the "Square in main race menu goes to settings"? I've been playing for a month or two, and it always went out for single races, and offered me "return to home" on championships...
 
Gas economy during the pit stops is HUGE and is sometimes the only way to win a close race. Everyone gets 80 units of fuel in their tank. If you know that you only use 30 units between pit stops then when the window comes up asking for tires and fuel you can say no to fuel the first time. The next time say yes but watch carefully and press "X" when the fuel gets to 31. The other cars max out on fuel at every stop so your pit stops should be faster and your overall lap times should also be a little quicker because you are in a lighter car. I won a 200 mile Laguna Seca race by 4 seconds recently (beat a Ford GT and a Dodge Viper with a Proto) because I was careful with my fuel consumption and tire selection.

For the GT championships it is crucial to watch your gas.

Not sure if this is a shortcut or not, but it is pretty cool. My buddy Norm showed me that when you're racing, if you just tap the ebrake button it puts you in neutral. Then to get out of neutral, just hit the gas again.

I was finishing up a rally race yesturday and I noticed something. When you get a time penalty and you hit the E-brake to go into neutral, you can just coast through the penalty and you don't slow down as much.
 
...or just let go of the accelerator and coast that way. And if you're in front you should have enough speed to get some blocking going
